Legend says that that  these letter-shaped biscuits were made by nuns in a Covent around Florence, right during the days of the Lent. Even if their   ingredients are simple, they have the delicious taste of chocolate and they are greatly appreciated by children for their characteristic shape. 

150 gr of plain flour
3 egg withes
170 gr of icing sugar (GB)
30 gr of dark cocoa powder
Zest of one orange
Pinch of salt 

Pre-heat the oven at 150°C .In a bowl whisk the egg whites until stiff. In another bowl mix all the other ingredients: flour, sugar, cocoa, salt and the zest of an orange. Then delicately add  the dry ingredients to the egg whites until you get a smooth mixture. Place the batter in a pastry bag and  “write” the letters directly on a baking tray covered in baking  paper, be careful not to  write the letters to close to each other, as they will rise  while baking. Bake for 15 minutes.
